In CCC 5.x backups can be stored for up to 14 days unless you are doing a scheduled full or increment backup, then they will be retained until you manually remove them. How long is also dependent on how much space the restore points are taking up – if there is less than 2% free space available after your incremental backups have run, older ones will automatically be deleted (if backed-up data has not exceeded 50%). If you need more time before the automatic deletion occurs please contact support for help.

Why are the files in my backup encrypted?

If you have set encryption of backups, then all backed-up data is automatically encrypted using a key which is either generated by CCC or one that you provide yourself and stored locally on your device. With respect to iOS release-key (non-jailbreak) models, this information can be found at http://support.apple.com/kb/ht5057 and with respect to jailbroken devices, any non-standard method of restoring should not be attempted unless directly instructed to do so by support staff.

Is it safe to delete old backups?

Each backup you create is independent of the others which means that yes it’s safe. What you need to make sure of is that backups, in being deleted, are not ones made for specific purposes. If all they are is regular backups and everything from your latest backup works great, then I would go with deleting them.
